The design of Schnitzel & Schnaps adopts a classical approach to detailing. Design elements of traditional bistros have been carefully brought together to create an authentic atmosphere. On the ground floor The main bar is located in a triangular site. The bar is framed in decorative moukding panels, and a solid cast zinc counter was designed inhouse, and custom made by specialist metalworkers, before being shipped to Hng Kong. Fan marble mosaic tiles form the ground, while intricate tin panels wrap around overhead beams. 

On the first floor, a more intimate dining setting can be found, with deep red leather booth seating, and a delacitely textured wall finish. Large ornate frameed mirrors are hung on the wallls to add a sense of openness. The ground and first floors are connected by feature stair with a decorative spider chandelier overhead. All of the lighting was custom designed by Brash Atelier.
